ORIGINS: Rome, Lazio. Cacio e pepe is one of Italian cuisine’s oldest dishes. Food historians claim it originated from the foothills of Rome where shepherds are credited with using sheep’s cheese to create this pasta dish. Cacio e pepe means “cheese and pepper” in several Italian dialects.
